Bronzed Alaska Salmon
with a wine, butter, caper sauce

Serves 2
Great for nights when you didn't plan dinner
because this cooks from frozen in about 5-6 minutes!

ingredients

Treasures From the Sea Frozen Sockeye Salmon

2

Tablespoons Private Selection Extra Virgin Olive Oil

1/2

Teaspoon (or to taste) Cajun's Choice Blackened Seasoning

1/4

Cup of your favorite dry white wine

1/2

Tablespoon Kroger butter

1

Teaspoon Private Selection capers, drained

As with any recipe, you can increase or decrease ingredients or cook time to suit your own tastes.

directions

  1. Heat a large non-stock skillet over med-high heat for one minute.  Brush some oil on both sides of the frozen salmon fillets and on the bottom of the hot pan.  Season the fillets with the Cajun's Choice  seasoning and place them in the hot skillet.  Cook 1 minute, then turn and cook another minute. 
  2. Turn the heat to low, cover pan tightly, and turn every minute or so until center is almost done to your liking. 
  3. Remove pan from the heat and add the wine, butter, and capers.  Return pan to heat and simmer until sauce thickens (about 30 seconds).  Use tongs to swirl the salmon, coating it with the sauce.  Turn the salmon one more time to coat the other side and serve. 

Serving suggestion:  Serve over hot couscous (also cooks in only 5 minutes!) with your favorite green vegetable.
