Shrimp Scampi

Pound Kroger shrimp, peeled and deveined, and patted dry with paper towels |

Tablespoon Carapelli olive oil, separated |

Packet Cajuns Choice® Cajun Shrimp seasoning |

Cup Robert Mondavi Private Selection® Pinot Grigio or Chardonnay wine |

Tablespoons Kroger butter |

Teaspoon (wedge) fresh lemon juice |

As with any recipe, you can increase or decrease ingredients or cook time to suit your own tastes.
- Mix shrimp, 1 tablespoon olive oil, and the Cajun Shrimp seasoning in a bowl and toss to coat.
- Heat a large non-stick skillet over medium-high heat for one minute.
- Add the remaining tablespoon of oil to the hot pan and swirl to coat. Add the seasoned shrimp and sauté for two minutes. Remove the cooked shrimp from the pan and place on serving plates.
- Add the Robert Mondavi Private Selection wine to the same skillet and return to med-high heat. Simmer until wine has reduced by 75%. Remove the pan from the heat and add the lemon juice and butter. Whisk the liquid until butter is melted and sauce is thickened. Pour over cooked shrimp and enjoy.
Serving Suggestion: Serve over pasta and garnish with fresh chopped parsley. Accompany with the same Robert Mondavi wine used to cook the shrimp.
