Perfect Chicken Over
Fresh Salad

Serves 4

ingredients

Perdue Perfect Portion boneless/skinless chicken breasts, cut into 1/2-inch wide strips or 1/2-inch cubes

Tablespoon Kroger Olive Oil

1/2

Teaspoon (or to taste) Chef Paul Prudhomme's Poultry Magic

 

Your favorite Fresh Express prepared salad mix

(or more) grape tomatoes, cut in half

1 or 2

Your favorite salad toppings, such as Welch’s Tropical Dried Fruit Mix, Sunkist (or some other) toasted nut toppings, crumbled feta cheese, sliced black olives, toasted pine nuts, raisins, etc.

 

Your favorite Wishbone Salad Spritzers Salad Dressing

As with any recipe, you can increase or decrease ingredients or cook time to suit your own tastes.

directions

  • Heat a skillet over medium heat for 1 minute.  Add olive oil and swirl to coat.  Season the chicken all over with the Poultry Magic and add to the pan.  Cook several minutes, stirring occasionally, until the chicken is fully cooked.  Drain, remove to a plate, and cover to keep warm.
  • Toss the salad mix in a large salad bowl with the tomato halves and 1 or 2 of your favorite toppings. 
  • Add the cooked chicken cubes to the salad, toss with the salad dressing, and serve right away.  Note:  if you're using chicken cut into strips rather than cubes, mix the salad, tomatoes, and toppings together and toss with the dressing.  Put the salad on serving plates and arrange the cooked chicken strips on top.
