Serves 4
2 Fresh Market Pork Tenderloins, sliced into ½ inch medallions
2 tablespoons Fresh Market olive oil
2 tablespoons (or to taste) Instant Gourmet®
Original Seasoning
1 bottle Big Acres® Mango Peach Chile Sauce
Salt and pepper to taste
- Heat your grill to med-high. Meanwhile, rub the pork tenderloin medallions with the olive oil and season to taste with the Instant Gourmet seasoning.
- Grill the pork tenderloin medallions for 3-4 minutes per side, or until center is just done.
- Brush the pork medallions with the Big Acres Mango Peach Chili sauce and immediately remove from grill and place on serving plates. Pour some additional sauce on the side for dipping.
Chicken Satays with Peanut Dipping Sauce
Serves 4
2 Fresh Market boneless chicken breast
cut into ½ inch strips.
8-10 six inch wooden skewers,
soaked in water for 30 minutes.
¼ cup Big Acres® Teriyaki Marinade
1 cup Big Acres® Peanut Sauce, slightly heated
- Thread the chicken strips onto the wooden skewers and place in a zippy bag with the teriyaki marinade. Place in the fridge for 30 minutes.
- Heat your grill to med-high. Place the chicken satays on the grill and cook for 5-8 minutes (or until just done).
- Serve immediately. For a decorative presentation, cut a cantaloupe in half and remove the seeds. Place the sauce in the cavity of the cantaloupe and stick the satays into the outer ring of the cantaloupe.
Tomato Basil Bruschetta
Serves 4
1 Fresh Market baguette bread,
sliced on the bias into ¼ inch pieces
¼ cup Fresh Market olive oil
5 Fresh market plum tomatoes, seeded and diced small
¼ cup Instant Gourmet® Rustic Italiano herb blend
1 bunch fresh basil, chopped
4 tablespoons Fresh Market olive oil
¼ cup shredded parmesan or gruyere cheese
- Reconstitute the Instant Gourmet Rustic Italiano blend in ½ cup warm water for 10 minutes and drain well. Meanwhile, heat your grill to med-high heat.
- slice the baguette bread on the bias and brush both sides with the olive oil.. Grill the sliced bread on the grill until lightly toasted.
- In a large bowl, stir together the drained Instant Gourmet Italiano blend, tomatoes, chopped basil, and olive oil. Spoon this mixture onto the toasted baguette bread and top with the shredded cheese. A GREAT start to all your summer grilling.
