Slow Cooker Mashed Potatoes

Serves 8-10

These are melt in your mouth mashed potatoes, and what could be better than MountainKing Butter Red Potatoes in the slow cooker? This dish is also great for buffet style dinning because they stay fresh for hours on a low setting.

ingredients

5 lbs MountainKing Butter Red Potatoes, cut into chunks (do not peel)
1 tablespoon minced garlic, or to taste (I use 2T)
3 cubes chicken bouillon
1 (8 ounce) sour cream
1 (8 ounce) package of cream cheese, softened
½ cup butter
  Salt and pepper to taste

Directions

Cook the potatoes, garlic and bouillon in a large pot of lightly salted water until to potatoes are tender but firm, about 15 minutes. Drain, but reserve water. Mash potatoes with sour cream and cream cheese, adding reserved water as needed to attain desired consistency. Transfer the potato mixture to a slow cooker, cover, and cook on low for 2 to 3 hours. Just before serving, stir in butter and season with salt and pepper to taste.

 

Parmesan-Roasted Potatoes

Serves 4 - 6

Although very little oil is used, these potatoes taste almost fried. Be sure to buy high-quality parmesan cheese for these crisp gems. Serve them with grilled steaks, lamb chops or braised chicken.

Ingredients

3 lbs MountainKing Fingerling or Russet Potatoes, cut into cubes (do not peel)
  Salt to taste, plus 1 teaspoon salt
3 tablespoons olive oil
¼ teaspoon freshly ground pepper
½ cup freshly shredded Parmesan cheese
2 tablespoons finely chopped fresh parsley

Preheat oven to 450 degrees. Oil roasting pan with olive oil.  Fill a large pot three-fourths full with water and bring to a boil over high heat. Add salt to taste and the potatoes and boil for 5 minutes. Drain well and pat dry with a kitchen towel.

In a large bowl stir together with olive oil, the 1 teaspoon of salt and pepper to taste. Add the potato cubes and toss to coat evenly.

Spread the potatoes in the prepared pan. Roast, turning every few minutes to prevent sticking, until tender and golden brown. Taste and adjust the seasoning. Transfer to a serving dish. Add the parmesan cheese and parsley and toss to coat evenly. Serve immediately.
