 Blackened Chicken Caesar 3 Butterball Fresh Chicken Breast
(cut in half and pounded thin) 2 tablespoons Chef Paul's Blackened Steak Magic 1 tablespoon olive oil 1/4 cup Stonehaven Chardonnay
1 bag Fresh Express salad
Emeril's Caesar Dressing
Heat a large skillet over med-high heat for one minute. Season the chicken with the Blackened Steak Magic. Place the oil in the hot skillet and swirl to coat. Add the chicken and sear for three minutes per side (or until center is done). Add the wine and simmer until evaporated (about one minute). Remove chicken from pan and set aside to rest. Dress the Fresh Express Salad with the Emeril's dressing, toss and place equal portions (more for the Fat Man) on individual plates. Slice the chicken into 1/4 inch thick strips and place on top of salad.
