Chicken with Cremini Mushroom Sauce
4 chicken breast halves, boneless and skinless
4 tablespoons butter, divided
1 medium shallot, minced
1 medium clove garlic, minced
1/4 teaspoon dried thyme
8 ounces cremini mushrooms, sliced
1/4 cup reduced sodium chicken broth
1/4 cup chardonnay
Salt
Ground black pepper
1/2 cup fresh parsley, chopped
Melt 2 tablespoons butter in nonstick skillet over medium high heat. Add chicken and sauté about 6 minutes on each side, until done, turning once. Remove from pan and keep warm. For the sauce, heat 2 tablespoons butter in same skillet. Add shallots, garlic, and thyme; sauté 30 seconds. Add mushrooms; sauté until lightly browned, about 6 minutes. Add broth and wine; bring to boil and simmer to blend flavors, about 5 minutes. Season with salt and pepper to taste. Serve sauce over chicken. Sprinkle with parsley. |
