CHICKEN WITH GINGER AND HONEY

4 Tablespoons olive oil
5 chicken breast, cut into strips
Salt & pepper
2 Tablespoons minced fresh ginger
1 Tablespoon minced garlic
3 Tablespoons honey
1 Cup chicken stock
2 Tablespoons cold water
- Heat 2 T olive oil. Season chicken with salt and pepper. Cook chicken strips until just cooked through, set aside.
- Add 2 T olive oil to skillet, reduce heat to medium and sauté ginger and garlic 1-2 minutes. Add honey and chicken stock, and reduce slightly. Meanwhile whisk cornstarch with 2 T cold water until dissolved. Add to sauce and cook 1-2 minutes.
- When sauce has thickened, return chicken to skillet until heated through.
