Alaska Cod in
Tomato Basil Wine Sauce
Serves 2
1 tablespoon Kroger Olive Oil
1 tablespoon onions - chopped
2 fresh chopped garlic cloves
1/4 cup Robert Mondavi
Private Selection Chardonnay
1 bottle clam juice
2 6oz. Alaskan Cod fillets
1 bunch fresh basil - chopped
1/2 cup diced tomatoes (drained well)
2 tablespoons unsalted butter
Sauté the first three ingredients in a large skillet over med-high heat for one minute. Add the wine, clam juice and Alaskan Cod and simmer until cooked through - turning once. Remove the Cod and transfer to plate. Add the basil to the pan and reduce the broth by 2/3rds. Add the tomato, and butter, add salt and pepper to taste. Pour over fish. |
