 Bronzed Alaskan Salmon
In a Butter Wine Sauce
Makes 2 servings
1 tablespoon Carapelli Olive Oil (19521-10945)
2 Great Alaskan Seafood Company Salmon fillets (94278-01609)
(Remove vacuumed sealed bags from package, and thaw in a sink of cold water for 15 minutes)
1 tablespoon Old Bay Seasoning (70328-82050)
1/4 cup Robert Mondavi Private Select Chardonnay, plus a glass for the chef
1 tablespoon Berkley & Jensen Unsalted Butter (00000-09001)
Salt and pepper to taste
Season both sides of the thawed salmon fillets with the Old Bay seasoning. Heat a large skillet over med-high heat for one minute. Add the oil and swirl to coat pan. Add the seasoned salmon fillets, and sear for one minute per side. Add the wine and butter, and swirl to coat all sides of the salmon. Simmer for one minute, or until liquid has completely evaporated. Remove from heat, and season to taste with salt and pepper. Serve immediately with a glass of Robert Mondavi Private Selection wine |
