Cedar Planked Alaska Salmon

Alaska Salmon (King, Sockeye, or Coho)
Cedar plank cut to the size of the salmon fillet (shown below)
Marinade
(I mix this to personal taste. I encourage anyone using this recipe to do the same. Change the quantities to match your taste buds.)
1/2 cup soy sauce
1/2 cup rice vinegar
2 to 4 large cloves garlic, minced.
11/2" piece fresh ginger, minced
3 tbls honey or 2 tbls brown sugar
Juice of 1 lemon
Two or more dashes hot sauce
Make sure salmon will fit inside the grill on the cedar plank. Combine the marinade ingredients. Place salmon in marinade skin side up and cover with plastic wrap. Marinate for 1 hour. Cover the cedar plank with water, weighting it so it stays under the water. Soak for a minimum of 2 hours. Preheat gas grill. One side high, the other side low. With a charcoal grill, bank briquettes to one side. Place the cedar plank over the high heat until the bottom becomes charred. Remove the salmon from marinade and place skin side down on the charred side of the cedar plank. Place lemon slices on the salmon. Discard the marinade.
Place the plank over the low heat side of grill and close the lid. Cook until the salmon just flakes. Sprinkle with chopped green onion tops and serve with lemon wedges. (Variation – Drizzle with a small amount of toasted sesame oil). |
