Serves 2, for a Romantic Dinner
For each person:
1 Alaska Salmon (or Cod) fillets
1 tablespoon Olive Oil
1 tablespoon chopped onions
1 garlic clove - minced
1 teaspoon Cajun's Choice Creole Seasoning (or to taste)
1 tablespoon butter (optional)
1 tablespoon white wine (optional)
One- 12 inch sheet of Reynolds Aluminum Foil
Place the onions, garlic, butter, and wine in the center of the sheet of aluminum foil. Rub the oil onto the Alaska salmon fillet, and season with the Cajun's Choice. Place the seasoned Alaska Salmon fillet on top of the onions in the center of the foil. Bring the two longer ends of the foil together and fold down in ½ in folds until almost touching the salmon fillet. Fold the other two ends up to form a tight seal packet. Bake at 450 degrees for 16-20 minutes. Remove from oven, and serve on immediately over the Asparagus Sauce.
For convenience sake, you can cook it from frozen. Just add 7 minutes on to the cooking time. It's quick, easy and delicious.
