Lime Salmon Flambe’

½ C. Sugar and Water (Simple Syrup)
1 to 2 Segments of Candied Ginger
4 to 6 Lime Slices, Thin
1 Tbs. Extra Virgin Olive Oil
1 Jigger Brandy
1 Tbs. Roses Lime Juice

Cook 4 to 6 Lime slices in Simple Syrup, Roses Lime Juice, adding candied ginger. Cook up Salmon in Extra Virgin Olive Oil for 5 to 7 minutes until done. Place on plate and wipe out olive oil with paper towel. Place Salmon back in pan  and add Brandy and place back on heat; flame. Plate up Lime slices and add simple syrup to pan with Salmon, turning Salmon several times to coat fish uncovered.

Place Salmon on plate with Lime Slices around plate’s edge, add berries. Place Candied Ginger segments on top of Salmon.
