Lobster Ravioli With
Artichoke Lemon Wine Sauce

Serves 2
1 tablespoon Private Selection olive oil
1 green onion, sliced thin (white part only)
1 clove garlic, minced
¼ cup Papio chardonnay wine
¼ cup Kroger heavy cream
2 tablespoons Cibo Artichoke Lemon Pesto
1 package Cibo Lobster Ravioli
Salt to taste

  1. Heat a large skillet over med-high heat for one minute.  Add the sliced onion and garlic and sauté for 30 seconds.  Do not burn the garlic.
  2. Add the Papio wine to the pan and simmer until liquid has reduced by 23rds.
  3. Add the cream and Cibo pesto to the pan and stir well to incorporate.
  4. Add the Cibo lobster ravioli and cover.  Simmer for 2-3 minutes to cook the pasta, turning once.
  5. Season with salt and serve immediately with a glass of Papio chardonnay and Key West salad.

Key West Salad

Earthbound spinach
Fresh Strawberries, sliced
Chopped walnuts (optional)
Private Selection Raspberry Walnut Dressing

Combine all ingredients into a large bowl and toss. Delicious!
