Lobster Ravioli With Artichoke Lemon Wine Sauce

Serves 2
1 tablespoon Private Selection olive oil
1 green onion, sliced thin (white part only)
1 clove garlic, minced
¼ cup Rancho Zabaco Dancing Bull sauvignon blanc
¼ cup Kroger heavy cream
2 tablespoons Cibo Artichoke Lemon Pesto
1 package Cibo Lobster Ravioli
  Salt to taste
  • Heat a large skillet over med-high heat for one minute. Add the sliced onion and garlic and sauté for 30 seconds. Do not burn the garlic.
  • Add the wine to the pan and simmer until liquid has reduced by 2/3rds.
  • Add the cream and Cibo pesto to the pan and stir well to incorporate.
  • Add the Cibo lobster ravioli and cover. Simmer for 2-3 minutes to cook the pasta, turning once.
  • Season with salt and serve immediately with some fresh soft fruit salad.

Refreshing Soft Fruit Salad

Sliced ripe peaches
Sliced ripe Taylor Gold pears
Red grapes
Fresh sliced strawberries

Combine all ingredients into a large bowl and toss. Delicious!
