Orange Salmon Flambe’

½ C. Sugar and Water (Simple Syrup)
1 to 2 Segments of candied Ginger
4 to 6 Orange Slices, Thin
1 Tbs. Extra Virgin Olive Oil
1 Jigger of Grand Marnier Liqueur

Cook 4 to 6 Orange Slices in Simple Syrup, adding Candied Ginger. Cook up Salmon in Extra Virgin Olive Oil for 5 to 7 minutes until done. Place on plate and wipe out olive oil with paper towel. Place Salmon back in pan and add Grand Marnier and place back on heat; flame. Plate up Orange slices and add simple syrup to pan with Salmon, turning Salmon several times to coat fish uncovered.

Place Salmon on plate with Orange slices along side Salmon and add berries. Add Candied Ginger to top of Salmon.
