Poached Tilapia
Serves 2
4 tilapia fillets
1 bottle clam juice
2 green onions, sliced white part only
1 clove garlic, minced
2 tablespoons butter
10 Private Selection kalamata olives, pitted and quartered

- In a large skillet add the clam juice, onions, and garlic and bring to a simmer.
- Add the tilapia fillets and reduce heat to a very low simmer.
- Poach the fillets for 5 minutes (or until just done).
- Remove the fillets from the pan and set aside on serving plates.
- Turn heat to high and boil liquid until reduced by 2/3rds.
- Remove the pan from the heat and add the butter and kalamata olives. Pour sauce over fillets and serve immediately. Season to taste with salt.
