Skewered Alaska Salmon Balsamico

Serves 4
11/2 Pounds Alaska Salmon, skin removed and cut into 2-inch chunks
8 Wooden skewers, soaked in water for 30 minutes
3 Small onions, quartered
  Carapelli® Olive Oil for grill preparation
For the Marinade and Sauce
½ Cup Carapelli® Olive Oil
1/3 Cup Robert Mondavi Private Selection Merlot or Pinot Noir
2 Tablespoons balsamic vinegar
2 Tablespoons fresh chopped rosemary (or a teaspoon of your favorite seasoning)
  Salt and pepper to taste
  1. Place all of the marinade ingredients into a large bowl and whisk together.
  2. Thread the Alaska salmon and onions onto the wooden skewers and brush with the marinade. 
  3. Prepare your grill to med-high heat and brush the grates with a little of the Carapelli® olive oil.  Place the skewers on the grill and cook for 5-7 minutes, or until gust done.
