Watermelon and Feta Salad

Serves 4

ingredients

  • 4 Cups watermelon, diced medium
  • 3 Tablespoons crumbled feta cheese

For the dressing:

  • ½ Tablespoon white wine vinegar
  • ½ Tablespoon Gourmet Garden basil
  • Pinch of salt and pepper
  • ¼ Cup Carapelli extra virgin olive oil

Directions

  1. Place the diced watermelon into a large bowl.
  2. To make the dressing, add the vinegar, basil and salt and pepper to a large glass bowl. Whisk vigorously as you drizzle in the oil a little at a time. Dress the salad and toss to combine. Top with the feat and serve.

Enjoy with a glass of Rosemount Chardonnay
