Watermelon and Feta Salad
Serves 4
- 4 Cups watermelon, diced medium
- 3 Tablespoons crumbled feta cheese
- ½ Tablespoon white wine vinegar
- ½ Tablespoon Gourmet Garden basil
- Pinch of salt and pepper
- ¼ Cup Carapelli extra virgin olive oil
- Place the diced watermelon into a large bowl.
- To make the dressing, add the vinegar, basil and salt and pepper to a large glass bowl. Whisk vigorously as you drizzle in the oil a little at a time. Dress the salad and toss to combine. Top with the feat and serve.
Enjoy with a glass of Rosemount Chardonnay
